These Keto Roast Beef Sandwiches are Bomb!

Ready to give pork rind buns a try? We've got a dead easy keto roast beef recipe to prove our point. All you need is a slow cooker and a little time. Don't have either? The buns work great in any sandwich-adjacent recipe.

The keto diet is a low carb, high fat way of eating, focused on whole foods, plant-based protein and fibrous vegetables. Keto recipes mostly include fish & sea food, meat & poultry, eggs, and low carb vegetables. But even if you are on a ketogenic diet, that doesn't mean you can't eat and enjoy the taste of your favorite foods — you can easily make keto friendly pizza, chaffle bread, roast beef, deli meat, pot roast or cheesecake with provolone cheese, swiss cheese or other types of cheeses.

Here is what you need to cook the perfect roast beef keto sandwich:

 


SANDWICH FILLING INGREDIENTS

  • 3 lbs trimmed chuck roast
  • 20 oz roast beef broth
  • 3 tbsp garlic powder
  • 1 onion, chopped (or onion powder)
  • 1 cup pepperoncini peppers

SANDWICH FILLING DIRECTIONS & COOKING TIME

  1. Add all ingredients to your handy slow cooker.
  2. Cook on low for 6 hours.

BUN INGREDIENTS

  • 2 oz cream cheese
  • 3 cups mozzarella cheese, shredded, or other kind of gooey cheese
  • 2 eggs
  • 1 cup almond flour
  • 1 cup Southern Recipe's Salt and Pepper Pork Rinds, crushed
  • 1 tbsp baking powder

BUN DIRECTIONS

  1. Preheat your oven to 400 degrees F (204 degrees C).
  2. In a large bowl, microwave cream cheese and shredded cheese (mozzarella) until melted.
  3. Add all remaining ingredients to the bowl of melted cheese. Stir well to combine into a dough.
  4. Form dough into 2-inch balls and place on a lined baking sheet or parchment paper. Leave plenty of room for dough expansion.
  5. Place the baking sheet into the preheated oven and bake for 12 minutes.
  6. Assemble your sandwich by adding the fully-cooked meat to the buns. Want some extra flare? Top with cheese. Lunch is ready! 😋
  7. If you need more flavor, you can use worcestershire sauce, mustard, mayo or Barbecue sauce or even Hummus to moisten your sandwich.
