Keto Meatloaf Muffin Recipe


INGREDIENTS

  • 1 tsp olive oil
  • 1/3 cup onion, minced
  • 1/3 cup carrot, minced
  • 1/3 cup celery, minced
  • 2 tsp dried parsley, minced
  • 2 garlic cloves, minced
  • 1/3 cup keto-friendly ketchup
  • 2 tbsp mustard
  • 2 tsp Worcestershire sauce
  • 1/2 tsp salt and pepper (black pepper works better)
  • 2 large eggs
  • 1.5 pounds lean ground beef
  • 1/3 cup bacon, fully cooked & crumbled
  • 1 cup Original Pork Rinds, crushed

DIRECTIONS

  1. Preheat oven to 350 degrees F and spray muffin tin with cooking spray.
  2. Heat the olive oil in a medium skillet over medium-high heat. Add onion, carrot and celery until soft. Add dried parsley and garlic, cook for 1 more minute. Remove and set aside. Another option is to sauté the first three ingredients in butter before adding it to the meatloaf mixture.
  3. In a medium or large mixing bowl, whisk together ketchup, Dijon mustard, Worcestershire sauce, pepper and eggs. Add sautéed onion mix. Add the meatloaf mix. Add bacon. Add just the right amount of bread crumbs. Toss to combine.
  4. Put the mix in the preheated oven and bake for 25-30 minutes or until internal temperature reaches 160°F. Let the meatloaf rest for 5 minutes.
  5. Top with sugar free ketchup and minced parsley.

Keto Meatloaf With Pork Rinds Alternatives For A Keto or Low Carb Diet

  • You can use onion powder and garlic powder instead of regular onions and garlics. It's obviously easier that way if you don't have any and don't want to make a run to the store.
  • Some people like to use almond flour with the crushed pork rinds, but you'll have to reduce the pork rinds quantity if you want to keep the carb count in check.
  • Using loaf pans is also an option. If you want your meatloaf to have an original loaf shape, just use a loaf pan with a baking sheet.
  • Some meatloaf lovers add milk to the recipe, unsweetened coconut milk is our choice here for a good meatloaf recipe.
  • The regular meatloaf is done with beef, but if you want to try different meats, ground pork and ground turkey work, too. We always recommend to mix it with ground beef in even proportions in a large bowl or with a food processor.
