Baked donuts are considered the best dessert by many people because they are a classic sweet treat that combines a soft, cakey interior with a crispy coat, often made with sweet glaze or toppings. The coolest thing about keto donuts (or doughnuts) is that you can create your own tasty recipe using simple ingredients such as protein powder & vanilla extract for the batter, and dairy free coconut cream, heavy cream or butter for the glaze. INGREDIENTS

  • 1/4 cup pork rinds (chicharrones), crushed
  • 2 cups almond flour(or coconut flour)
  • 1/2 cup granular / powdered sweetener of choice (we like monk fruit)
  • eggs(egg yolks and egg whites)
  • 1/4 cup milk(or a substitute such as almond or rice milk)
  • 1 tsp baking soda(or baking powder)
  • 1 tsp apple cider vinegar
  • Keto-compliant sprinkles, flavor, and icing, if desired

DIRECTIONS

  1. Preheat oven to medium heat (350°F) because … “Some like it hot and some sweat when the heat is on. Some feel the heat and decide that they can't go on.”
  2. In a large bowl, mix all dry ingredients thoroughly. You can add a pinch of salt if you like.
  3. Mix in remaining ingredients: Fold eggs, milk, baking soda, and vinegar to the dry ingredients to make the donut batter. Combine until consistency becomes dough-like (a bit sticky).
  4. Fill a plastic bag with the dough and cut off a corner to make a pastry or piping bag to pipe out the batter. (We ain’t fancy. Just make your own, y’all!)
  5. Add the thick dough to greased donut pan (you can use coconut oil) and bake for 12-15 minutes.
  6. Remove the keto donuts from pan and allow to cool completely before transferring them to a wire rack and decorating. Is the texture of the inside of your cooled donuts moist, crumbly, and fluffy? You are an amazing cook!.
