Garlic Dill Pork Rind Balls

    1/2 cup Rudolph's Original Pork Rinds (finely ground)
    1 pound ground chicken
    1/2 pound ground pork
    1 small onion, finely chopped
    1 egg
    2 garlic cloves, pressed
    2 Tbsp. chopped fresh dill
    1/2 tsp salt
    1/4 tsp freshly-ground black pepper
    2 Tbsp. canola oil


Heat oven to 375 degrees. Combine chicken, pork, onion, pork rinds, egg, garlic, dill, salt and pepper in a bowl and mix until completely combined. Roll mixture into 1 1/2-inch meatballs.

Heat oil in a large ovenproof skillet over medium-high heat. Brown meatballs on all sides.

Transfer skillet to oven; bake 10 minutes or until meatballs are cooked fully.
