You may remember how the chorus goes: "Make you pork rind pancakes, pretend like it's the weekend now."

Since that song was released, PorkRinds.com has struggled to produce enough pancakes to meet the insatiable demand for ketorecipes.

Over 15 years later, we're giving up and sharing our secret "pork rind pancake" recipe with the world. Consider it our open-source contribution to the greater good of society! And you know why? Because pork rinds are keto and a healthy alternative to other snacks.

This keto-friendly, low-carb recipe with pork rind flavor sounds a little..bizarre, but hear us out. Once you've tried this pancake recipe, you'll forget about your regular pancakes.

Chicharrones (or pork rinds) are savory, salty, and chock full of collagen protein with zero carbs and low fat. Wouldn't that make an excellent complement to sweet, low-carb syrup, full-bodied cinnamon, and rich butter?

You've had candied bacon, right? Well, get off your high hog and try these delicious low carb keto pancakes! They are fluffy, thick, easy to prepare, and they are perfect for breakfast, as they go very well with a cup of coffee. No baking powder or flour needed.



INGREDIENTS

  • 1 & 1/2 cups of Apple Cinnamon (or Original Flavored) Crushed Pork Rinds, crushed (you can use food processor or a blender to grind)
  • 2 tbsp Flaxseed Meal
  • 1 tsp Cinnamon
  • 1/2 cup Cream
  • 2 Eggs
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Cooking Oil or Lard
  • Diet-Compliant Syrup of Your Choosing

DIRECTIONS

  1. Heat oil in a skillet or a pan to medium heat.
  2. Combine crushed, ground pork rinds, flaxseed meal, cinnamon, and cream.
  3. Mix in eggs and vanilla extract.
  4. Let the batter sit for a few minutes to thicken
  5. Add pancake mixture to skillet and press flat.
  6. Keep an eye out for bubbles forming to flip onto the other side
  7. Cook for 2 minute on each side until golden.
  8. Serve hot with syrup, or as you’d like.
